Continually inspired by the wonderful local produce Ireland has to offer, the creative process for our Head Chef Sean begins in working closely with the farmers, fishermen, producers and artisans who cultivate bespoke produce exclusively for us here at Beile Blasta.


For each dish, the growth of every element and the selection of every piece of produce is carefully considered and crafted for its role in the finest of dining experiences.
